It started with a simple obsession: make the best possible version of the things we love — a croissant that shatters, a layer cake with real structure, a loaf with a crust that actually crackles. Nothing shipped in frozen, nothing shortcut.

Every recipe is built from scratch in our downtown kitchen, every ingredient earns its place on purpose, and everything that leaves our ovens is sold the same day it's baked. That's the whole philosophy — we just happen to write it on a cupcake wrapper.

How We Source

We go looking for the good stuff.

01 — Flour

Milled, not manufactured

We buy from small mills we've visited ourselves, favoring flour milled in batches small enough to taste the difference.

02 — Butter

Cultured, high-fat

European-style cultured butter, full stop. It costs more and it shows in every laminated layer and browned edge.

03 — Fruit & Fill

Whatever's in season

Fruit and fillings come from growers we know by name, so the menu changes with the season instead of fighting it.
